Simple. Healthy. Easily Adjustable to fit your caloric needs.
Ingredients
2-4 chicken breasts, cubed
2-4 veggies of choice, cut to your liking
1-2 tbsp minced garlic
1-2 tbsp olive / avocado oil
Stir fry sauce (my personal recipe is below, but store bought is fine)
My Sauce
1 TSP sesame oil
2 TSP cornstarch
1/2 cup low sodium soy sauce
1 tbsp red pepper flakes (optional, I just like spice in my life)

Cooking
Heat pan over medium to high heat, putting cooking oil of choice with garlic in with it
Put chicken in for about 3-4 minutes (cubes shouldn’t be too large)
Add veggies, mixing in well with chicken. Cover and let soften (8-10 depending how soft you want them)
Add in sauce, stirring constantly as you do

BONUS
Add a handful (or 3) of spinach. Keep in mind it will wilt, so going heavier isn’t a bad thing.
Cook Rice of choice. Serve / pack and enjoy

It goes without saying, but fluctuate the serving sizes to fit your caloric needs. This is a solid meal for literally anytime of day, and can have added veggies to make it more nutrient dense.
